Slow and Low

I haven't had the time I had hopped to be able to write a blog post or two. I have had my hands full lately.

I have managed to finally get some cooking done. Being short on Kitchen time I have been using my slow cooker for most of our meals. It has become one of my favourite appliance. I love how you can prep & throw everything in during Dante's morning nap. Ignore it for the day & voila! An amazing dinner at the end of the day. I thought I'd share a few of the recipes I've tried that have turned out exceptionally yummy.

Pernil (Puerto Rican Pork)
The flavour of this pork was outstanding, & even better the next day. Unlike traditional saucy BBQ pulled pork, this pork has a wonderful cumin & lime flavor. Rather than the pork shoulder that the recipe called for I used two pork loins I had in the freezer. The first night we decided use the pork to make Cuban sandwiches. The left overs were great in wraps, sandwiches & even on its own.

Apple Butter
I had a bag of apples that had to be used or they would be going into the compost bin. This recipe was easy & the result was a wonderful cinnamon infused apple spread. We have enjoyed it on toast waffles, by the spoonful, and on oatmeal. I look forward to making this recipe with the apples from my backyard tree.

These recipes are now household faves that we will repeat gain & again. both recipes come form Skinnytaste.com. I love this blog there recipes are healthy, and taste amazing.
